Vegetable Pilaf

Ingredients

Rice -  4 cups
Water - 6 Cups
Curry powder- 2 tsp
Salt to taste
........................
Spices for tempering

2 Cinnamon sticks                                                              
3-4 cloves
2 cardamom
2 Bay leaves
1/4 tsp Fennel seeds
1 Star Anise



Ginger and Garlic Paste- 3 Tbs
Green chillies- 6
2 Medium Red Onions sliced
Tomatoes- 3
Oil to fry- 1/4 cup(approx)



Vegetables

Carrots - 2 sliced
Green Beans -2 hand full
1 Cauliflower (cut into small florets)
1 Large Potato
Green peas a hand full

Coriander leaves- 1 Bunch
Mint leaves few sprigs

Method

I cook my rice in a  pressure cooker or pressure pan without using the weight.I let the steam escape for about 12 minutes and the rice gets cooked just fine!

Soak the basmati rice in water for 30 minute,while it is soaking I heat the pressure pan pour the oil,add the whole spices wait for a few seconds, then add the sliced onions and green chillies saute for a few minutes till the onion becomes translucent.


Add the ginger and garlic paste,curry powder wait for the raw smell to go and then add the tomatoes.Do not over cook the tomatoes they turn the color of the rice.

Wait till you see oil separate on top of the masala then add the vegetables. Cover and cook the veggies for about 10-12 minutes I like my veggies a little crunchy !!

Pour about 6 cups of water when it comes to a boil add salt to taste and add the drained rice.Cover the cooker and wait for the steam once it starts to come up lower the flame and cook on medium flame for exactly 10-12 minutes.Your Vegetable rice will be ready to devour.It is a one pot dish with all the vegetable you can think of!
